Cocktail Definition: A potent concoction consisting of a Spirit, Sugar, Bitters, and Water

Simple Syrup and House Bitters

Demerara Raw Sugar Simple Syrup:
Simmer a ½ cup of water with ½ cup of Demerara Raw Sugar. Pour in mason jar and store in a refrigerator for up to 2 weeks.
House Made Orange Bitters:
Using a mortar and pestle, crush together, 2 Tbsp Cardamom, 1 Tbsp Coriander seeds, 1 Tbsp Caraway seeds, 1 tsp Gentian root, 2 Cinnamon sticks, lightly toast in a pan. Add ingredients to a small 8oz mason jar. Add ¼ cup of freshly grated orange peel, one teaspoon Vanilla extract, 1 oz Demerara Simple Syrup, Fill with 151 proof Rum. Let steep for one week at room temperature. Strain and press out liquid. Store in a dropper bottle. Lasts indefinitely.
Clear Ice

Clear ice tastes like pristine water, is denser, has more chilling power and a slower dilution rate as compared to cloudy ice which is less dense and has trapped air and impurities. Cloudy ice is more likely to transfer the taste of your freezer or pipes into your cocktail. A denser solid cube of clear ice will provide a longer period of sipping with minimal dilution.

1/2 oz. St. Germaine Elderflower Liqueur

1/2 oz. Fresh Lime juice

1/2 oz. Demerara Simple Syrup
-
2 dashes Angostura Bitters
-
2 dashes Peychaud’s Bitters
-
Spanish Cava Brut (Sparkling wine)
-
Chill Coupe Glass, Build drink in a pint glass, Add ice, Shake, Strain into Coupe Glass, Top with Cava Brut.

Maple Bourbon Old Fashioned
-
2 oz. Bourbon
-
1/4 oz. Maple Syrup
-
2 dashes Angostura Bitters
-
2 dashes House Orange Bitters
-
Build in Pint Glass or Yari, Add ice, Stir 20-30 rotations, Strain into Rocks Glass over a single ice cube.

Garnish with rough Orange Swath, Luxardo Cherries.

1 1/2 oz. Flor de Cana Aged Rum

3/4 oz. Fresh Lime juice

3/4 oz. Demerara Simple Syrup

1 dash House Orange Bitters

Chill Coupe Glass, Build drink in Pint Glass, Add ice, Shake, Strain into Coupe Glass

Garnish with a Lime swath

1 1/2 oz. Citadelle Gin

3/4 oz. Orange liqueur

3/4 oz. Fresh Lime juice

1/4 oz. Simple Syrup

Barspoon Absinthe

Dash Angostura Bitters
-
Chill Coupe Glass, Build drink in Pint Glass, Add ice, Shake, Strain into Coupe Glass

Last Word Cocktail

3/4 oz. Citadelle Gin

3/4oz. Green Chartreuse
-
3/4 oz. Maraschino Liqueur
-
3/4 oz. Fresh Lime Juice
-
Chill Coupe Glass, Build drink in Pint Glass, Add ice, Shake, Strain into Coupe Glass
-
Garnish with a Luxardo Maraschino Cherry.
