Sparkling Cava Cocktail
Ingredients:
Spanish Brut Cava, Elder Flower Liqueur, Housemade Orange Bitters, Demerara Simple Syrup, Peychaud’s Bitters and fresh Lime Juice.
Recipe:
- 1/2 oz. St. Germaine Elderflower Liqueur
- 1/2 oz. Fresh Lime juice
- 1/2 oz. Demerara Simple Syrup
- 2 dashes House Orange Bitters
- 2 dashes Peychaud’s Bitters
- Spanish Cava Brut (Sparkling wine)
- Chill Coupe Glass, Build drink in a pint glass, Add ice, Shake, Strain into Coupe Glass, Top with Cava Brut.

1930s Havana, Cuba Style Daiquiri
Ingredients:
Prepared with Aged Nicaraguan Rum, Housemade Bitters, Demerara Simple Syrup and fresh lime juice
Recipe:
- 1 1/2 oz. Flor de Cana Aged Rum
- 3/4 oz. Fresh Lime juice
- 3/4 oz. Demerara Simple Syrup
- 1 dash House Orange Bitters
- Chill Coupe Glass, Build drink in Pint Glass, Add ice, Shake, Strain into Coupe Glass
- Garnish with a Lime swath

Pear Brandy Fix
Ingredients:
Prepared with Gin, Cointreau, Lemon Juice, Pear Simple Syrup, Egg White
Recipe:
- 1.5 oz. Gin
- .5 oz. Cointreau
- .75 oz. Fresh Lemon juice
- .75 oz. Pear simple syrup
- 1 egg white

Prohibition Style Bees Knees
Ingredients:
Prepared with lavender infused Acacia Honey, Gin, and fresh lemon juice.
Recipe:
- 1.5 oz. Gin (We use Citadel Gin or Beefeater
- .75 oz. Lemon Juice
- .75 oz. Lavender infused Acacia honey

Old Fashioned
Ingredients:
Prepared with Bourbon, Angostura Bitters, House orange bitters, Turbinado Sugar, stirred in a Japanese Yari with fancy clear ice. Garnished with Cinnamon Stick, Luxardo Cherry, and Orange swath.
Recipe:
- 2 oz. Bourbon
- 1/4 oz. Turbinado Simple Syrup
- 2 dashes Angostura Bitters
- 2 dashes House Orange Bitters
- Build in Pint Glass or Yari, Add ice, Stir 20-30 rotations, Strain into Rocks Glass over a single ice cube.
- Garnish with rough Orange Swath, Luxardo Cherries.
- Add Cinnamon Stick

Last Word
Ingredients:
Prepared with Gin, Green Chartreuse, Maraschino Liqueur, Lime Juice, Luxardo Cherry
Recipe:
- 3/4 oz. Citadelle Gin
- 3/4oz. Green Chartreuse
- 3/4 oz. Maraschino Liqueur
- 3/4 oz. Fresh Lime Juice
- Chill Coupe Glass, Build drink in Pint Glass, Add ice, Shake, Strain into Coupe Glass
- Garnish with a Luxardo Maraschino Cherry.

Clear Ice
Clear ice tastes like pristine water, is denser, has more chilling power and a slower dilution rate as compared to cloudy ice which is less dense and has trapped air and impurities. Cloudy ice is more likely to transfer the taste of your freezer or pipes into your cocktail. A denser solid cube of clear ice will provide a longer period of sipping with minimal dilution.

Simple Syrup
Demerara Raw Sugar Simple Syrup:
Simmer a ½ cup of water with ½ cup of Demerara Raw Sugar. Pour in mason jar and store in a refrigerator for up to 2 weeks.
Bitters
House Made Orange Bitters:
Using a mortar and pestle, crush together, 2 Tbsp Cardamom, 1 Tbsp Coriander seeds, 1 Tbsp Caraway seeds, 1 tsp Gentian root, 2 Cinnamon sticks, lightly toast in a pan. Add ingredients to a small 8oz mason jar. Add ¼ cup of freshly grated orange peel, Fill with 151 proof Rum. Let steep for one week at room temperature. Strain and press out liquid. Add one teaspoon Vanilla extract and 1 oz Demerara Simple Syrup, Store in a dropper bottle. Lasts indefinitely.
