Cuban Espresso Martini
Ingredients:
- 1.5 oz. Aged Rum (Flor De Cana)
- 1 oz. Cuban Espresso / Muscovado Sugar Syrup
- 1/2 oz. Organic Cream
- 1 dash Xocalatyl Mole Bitters (Bittermans)
Preparation:
- Combine ingredients into a mixing glass and fill halfway with ice.
- Shake vigorously for 15 seconds.
- Strain into a chilled coupe or rocks glass with fresh ice.
Prohibition Bees Knees
Ingredients:
- 1.5 oz. London Dry Gin (Beefeater)
- 1 oz. Ginger & Chamomile Infused Acacia Honey
- 0.75 oz. Fresh Lemon Juice
- Expressed Lemon Swath (Garnish)
Preparation:
- Combine ingredients into a mixing glass, fill halfway with ice.
- Shake vigorously for 15 seconds.
- Strain into a chilled coupe glass or Rocks glass with fresh ice.
- Express the lemon swath over the cocktail to release the oils, and drop it into the glass as garnish.
Lions Tale
Ingredients:
- 1.5 oz. Bonded Bourbon
- 0.75 oz. Allspice-Infused Turbinado Simple Syrup
- 0.75 oz. Fresh Lime Juice
- 1 Dash Angostura Bitters
- Expressed Lime Swath (for garnish)
Preparation:
- Combine ingredients into a mixing glass, fill halfway with ice.
- Shake vigorously for 15 seconds.
- Strain into a chilled coupe glass.
- Express the lime swath over the cocktail to release the oils, and drop it into the glass as garnish.
New England Flip
Ingredients:
- 1.5 oz. Aged Rum (Flor de Cana)
- 0.75 oz. Pumpkin Spiced Simple Syrup
- 1 Whole Egg
- Shaved fresh Nutmeg
Preparation:
- Dry Shake 1 Whole Egg : Shake 1 egg with yolk (without ice) separately for 15 seconds to create a frothy texture.
- Combine the Ingredients in a mixing glass with egg white, fill halfway with ice.
- Shake vigorously for 15 seconds with both hands.
- Strain into a chilled coupe glass.
- Shave fresh Nutmeg with a micro plane over cocktail.
Pisco Sour
Ingredients:
- 1.5 oz. Pisco
- 0.75 oz. Organic Simple Syrup
- 0.75 oz. Fresh Lime Juice
- 1 Egg White
- Angostura Bitters (Add after pour)
Preparation:
- Dry Shake 1 Egg White: Shake 1 egg white (without ice) separately for 15 seconds to create a frothy texture.
- Combine Ingredients into a mixing glass with egg white, fill halfway with ice and secure a shaker tin on top.
- Shake vigorously for 10-15 seconds with both hands.
- Strain into a chilled coupe glass.
- Add 3 Drops of Angostura Bitters on Top of cocktail froth
Strawberry Basil Margarita
Ingredients:
- 1 oz. Organic Strawberry Infused Blanco Tequila
- 1/2 oz Union Mezcal
- 1/2 oz. Arette Blanco Tequila
- 1 oz Allspice Simple Syrup
- 3/4 oz Fresh Lemon/Lime Juice - 50/50
- 1 barspoon Fernet Branca (Offers notes of mint, ginger, rhubarb, and chamomile)
- Add 2 Fresh Basil Leaves to shaker
Preparation:
- Combine ingredients into a mixing glass and fill halfway with ice.
- Shake vigorously for 15 seconds.
- Strain into a chilled coupe or rocks glass with fresh ice.
- Add Fresh Basil sprig for garnish.
Apple Jack Old Fashioned
Ingredients:
- 2 oz Apple Jack Brandy
- 1/2 oz rich Demerara simple syrup
- 3 dashes Angostura bitters
- Expressed orange swath
Preparation:
- Add all ingredients to a mixing glass.
- Add 2 or 3 large clear ice cubes to the mixing glass and stir for 20 to 30 seconds.
- Smoke an Old Fashioned glass using Hickory wood or another type of hardwood.
- Strain the mixture into the smoked Old Fashioned glass over one large clear ice cube.
- Express an orange swath over the drink to release its aromatics, rim the glass with the orange swath, and then place it in the cocktail.

Notes:
- "Rich Demerara simple syrup" can be made by combining two parts Demerara sugar with one part water and heating until the sugar dissolves.
- "Express" means to twist the orange swath over the drink to spray its oils on the surface.
Classic Old Fashioned
Ingredients:
- 2 oz. Bourbon or Rye Whiskey
- 1/2 oz. Rich Demerara Simple Syrup
- 2 dashes Angostura Bitters
- 1 dash House Orange Bitters
Preparation:
- Add all ingredients to a mixing glass.
- Add 2 or 3 large clear ice cubes to the mixing glass and stir for 20 to 30 seconds.
- Strain into Old Fashioned glass over one large clear ice cube.
- Express an orange swath over the drink to release its aromatics, rim the glass with the orange swath, and then place it in the cocktail.
Caipirinha
Ingredients:
- 1.5 oz. Novo Fogo Cachaca
- 0.75 oz. Organic Simple Syrup
- 0.75 oz. Fresh Lime Juice
- 1 Dash Orange Bitters
- Expressed Lemon Swath (for garnish)
Preparation:
- Combine ingredients into a mixing glass, fill halfway with ice.
- Shake vigorously for 15 seconds.
- Strain into a chilled coupe glass.
Medicina Latina
Ingredients:
- 1.5 oz Tequila Blanco
- 1 oz Ginger, Chamomile, Acacia Honey Syrup
- 3/4 oz Fresh Lime Juice
- Mezcal Spray - Aromatic Layer
Preparation:
- Combine ingredients into a mixing glass and fill halfway with ice.
- Shake vigorously for 15 seconds.
- Strain into a chilled coupe or rocks glass with fresh ice.
- Spray Coupe or Rocks glass with Mezcal prior to pouring cocktail.
Pineapple Jalapeno Tequila Sour
Ingredients:
- 1 oz. Pineapple Infused Blanco Tequila
- 1/2 oz. Union Mezcal
- 1/2 oz. Arette Blanco Tequila
- 1 oz Jalapeno Ginger Agave Simple Syrup
- 3/4 oz Fresh Lemon Juice
Preparation:
- Combine ingredients into a mixing glass and fill halfway with ice.
- Shake vigorously for 15 seconds.
- Strain into a chilled coupe or rocks glass with fresh ice.
- Salted rim optional.
Ritten House Rye Sour
Ingredients:
- 1.5 oz. Ritten House Rye
- 0.75 oz. Allspice-Infused Turbinado Simple Syrup
- 0.75 oz. Fresh Lemon Juice
- 1 Egg White
- 1 Dash Angostura Bitters
- Expressed Lemon Swath (for garnish)
Preparation:
- Dry Shake 1 Egg White: Shake 1 egg white (without ice) separately for 15 seconds to create a frothy texture.
- Combine remaining ingredients into a mixing glass with egg white, fill halfway with ice.
- Shake vigorously for 15 seconds.
- Strain into a chilled coupe glass or Rocks glass with fresh ice.
- Express the lemon swath over the cocktail to release the oils, and drop it into the glass as garnish.
Oaxaca - Branca Old Fashioned
Ingredients:
- 1 1/2 oz Reposado Tequila (El Tessoro or Ganzalez 1939.
- 1/2 oz Mezcal (Del Maguey Vida)
- 1 barspoon Agave
- 2 dashes Angostura bitters
- 1 barspoon Fernet Branca
- Expressed Orange Swath
Preparation:
- Add all ingredients to a mixing glass.
- Add ice to mixing glass and stir for 20 to 30 seconds.
- Smoke an Old Fashioned glass using Hickory wood or another type of hardwood.
- Strain the mixture into the smoked Old Fashioned glass over one large clear ice cube.
- Express an orange swath over the drink to release its aromatics, rim the glass with the orange swath, and then place it in the cocktail
Clear Ice
Clear ice tastes like pristine water, is denser, has more chilling power and a slower dilution rate as compared to cloudy ice which is less dense and has trapped air and impurities. Cloudy ice is more likely to transfer the taste of your freezer or pipes into your cocktail. A denser solid cube of clear ice will provide a longer period of sipping with minimal dilution.
Simple Syrup
Demerara Raw Sugar Simple Syrup:
Simmer a ½ cup of water with ½ cup of Demerara Raw Sugar. Pour in mason jar and store in a refrigerator for up to 2 weeks.
Bitters
House Made Orange Bitters:
Using a mortar and pestle, crush together, 2 Tbsp Cardamom, 1 Tbsp Coriander seeds, 1 Tbsp Caraway seeds, 1 tsp Gentian root, 2 Cinnamon sticks, lightly toast in a pan. Add ingredients to a small 8oz mason jar. Add ¼ cup of freshly grated orange peel, Fill with 151 proof Rum. Let steep for one week at room temperature. Strain and press out liquid. Add one teaspoon Vanilla extract and 1 oz Demerara Simple Syrup, Store in a dropper bottle. Lasts indefinitely.
Ginger-Jalapeno Simple Syrup
Ingredients:
- 1 cup Water
- 1 cup Turbinado Sugar
- 1-2 Jalapenos, sliced (adjust to desired spice level)
- 2-inch piece of fresh Ginger, peeled and thinly sliced
Preparation:
- Combine: Mix water, sugar, cinnamon sticks, and allspice berries in a medium saucepan.
- Heat: Heat over medium, stirring until sugar dissolves.
- Simmer: Reduce heat to low and simmer for 10-15 minutes.
Store: Cool, strain, pour into a glass mason jar, and refrigerate for up to two weeks.
Cuban Espresso Muscovado Simple Syrup Recipe
Ingredients:
- ½ pound Dark Muscovado Sugar
- ½ pound freshly brewed Espresso (We use Organic Cuba Mia - Artizan)
Preparation:
- Combine: Mix sugar and espresso in a medium saucepan.
- Heat: Heat over medium, stirring until sugar dissolves.
Store: Let cool, store in glass mason jar, refrigerate for up to two weeks.
Honey Ginger Chamomile Simple Syrup
- 1 cup Acacia honey
- ½ cup water
- 1-inch piece of fresh ginger, peeled and thinly sliced
- 2 chamomile tea bags
Preparation:
- Combine: Mix honey, water, ginger, and chamomile tea bags in a medium saucepan.
- Heat: Heat over medium, stirring until honey dissolves.
- Simmer: Reduce heat to low and simmer for 10-15 minutes.
Store: Cool, strain, pour into a glass mason jar, and refrigerate for up to two weeks.
Cinnamon Allspice Simple Syrup
Ingredients:
- 1 cup water
- 1 cup Turbinado sugar
- 2 Cinnamon sticks
- 1 tablespoons whole Allspice Berries
Preparation:
- Combine: Mix water, sugar, cinnamon sticks, and allspice berries in a medium saucepan.
- Heat: Heat over medium, stirring until sugar dissolves.
- Simmer: Reduce heat to low and simmer for 10-15 minutes.
Store: Cool, strain, pour into glass mason jar, and refrigerate for up to two weeks.
Strawberry Infused Blanco Tequila
Ingredients:
- 1 cup fresh strawberries, sliced
- 2 cups Blanco tequila
Preparation:
- Combine: Place sliced strawberries in a clean, airtight jar. Pour Blanco tequila over the strawberries.
- Infuse: Seal the jar and store in a cool, dark place for 3-5 days, shaking gently each day.
- Strain: Strain the tequila through a fine mesh sieve to remove the strawberries.
Store: Pour the infused tequila into a clean bottle and store in a cool, dark place for up to two months or in the refrigerator for up to six months.
Pineapple Infused Blanco Tequila
Ingredients:
- 1 cup fresh Pineapple (sliced / chopped)
- 2 cups Blanco tequila
Preparation:
- Combine: Place sliced Pineapple in a clean, airtight jar. Pour Blanco tequila over the Pineapple.
- Infuse: Seal the jar and store in a cool, dark place for 4-5 days, shaking gently each day.
- Strain: Strain the tequila through a fine mesh sieve to remove the Pineapple
Store: Pour the infused tequila into a clean bottle and store in a cool, dark place for up to two months or in the refrigerator for up to six months.
